Both work in different laboratories; however, they soon decide to join forces as they realize they are capable of opening their own pastry shop. At the age of twenty, in 1993, they founded the Bar Nuovo Fiore pastry shop. To the south of Sicily there is a city bathed by the sea, Sciacca. This is the most beautiful and populous city in the entire province of Agrigento. The story of the Lo Monaco brothers, Calogero and Salvatore, and of the " Cucchitella " is intertwined in Sciacca. This is the typical and exclusive dessert of the city, which is produced and processed by hand following the rules of the typical Sicilian tradition.

History of Cucchitella di Sciacca

Cucchitella was prepared for the first time around 1380 by the cloistered nuns of the Monastery of Santa Maria dell'Itria, known as Badia Grande di Sciacca and founded in 1371. The nuns were once the only ones to try their hand at preparing desserts ; they sold them only to the lords who could afford them so they could provide for their own needs and support the monastery.

Cucchitella is a morsel made from almond paste stuffed with "zuccata" or courgette jam. Almond paste is a mixture of flour, sugar, and ground almonds. Zucchini, on the other hand, is a jam made from green courgettes, which are boiled and then seasoned with sugar to obtain a very sweet jam. Once manually given the spoon shape, the cucchitelle are put in the oven; As soon as they are ready, they are left to cool and then half glazed with icing or icing sugar.
